Just Wing It

Just Wing It started as a food truck in 2021. Two friends, one from Buffalo and one from Boone, parking at App State football games and building a following before they ever had walls. The brick-and-mortar opened on Backstreet in West Jefferson in 2024.

We stumbled in almost by accident one day after spending the day with some out of town friends who were in West Jeff. We needed to find something open and I can’t tell you how glad I am we did.

These wings are the real thing, not the sad bar-snack version most kitchens settle for. The house "blue cheese" threw us at first. I’m a blue-cheese-on-wings convert and grew up on ranch. It tasted like nothing we'd ever filed under blue cheese. Give it two wings. It won us over fast, and now it's the only sauce we order. I’m no food critic but you can immediately taste the quality.

Don't stop at the wings. The smash burgers are unbeatable, and the tots (for me) and the fries are both the right call, so get whatever the table can't agree on and split it. I don’t know what they are doing back there but whatever it is, you can feel the concern for a good time pouring through the food.

There's always something local on tap, but the reason Just Wing It is a destination is Kevin behind the bar. He drives a kind of conversion van turned pickup truck, like something out of Mad Max. He works the room like a one-man radio station, singing and spinning his own set from 90s hits to outlaw country to rap. You might not know a single song. You'll leave feeling like you knew all of them. Once I told Kevin he was a big reason we love to come and he said “It’s called giving a F*!”. And he does. They do.

Don’t worry. He was discreet. It's genuinely family friendly, too. Kevin treats our two girls like regulars, digs out coloring sheets, and pins their work to the bulletin board like it's a gallery opening. That's the whole feeling of the place. A wing joint that runs like somebody's living room. If you’re a sports fan, the games are on. If not, the Kevin’s set carries the day.

Backstreet itself is a story worth knowing. It's the street parallel to Jefferson Avenue, which is where the tourists go. Backstreet is where the locals go. The Ashe County Farmers Market is a few doors down. So is Backstreet Park, where the free summer concert series happens. Just Wing It picked Backstreet on purpose.
