★ Why we picked this

Pat Johnson left Minnesota and Fayetteville for Avery County in the 1980s and spent decades learning what the people here already knew, how to can what grows. At ninety-four she is still making apple butter, and the Avery Journal-Times ran her story on the skill and the gardens that feed it. This is not nostalgia. People still do this work, and every year fewer of them teach it to somebody younger. The garden and the jar are not decorative.
