Two professors in Appalachian State University's Fermentation Sciences Program have launched a sweet potato milk startup company called Rootsii with the goal of promoting nutrition and reducing food waste. The venture is led by Brett Taubman, the program's director, and Daniel Parker, its operations and facility manager.
